Super easy homemade chips! Serve with everything from steak to beans...
STEP 1 - Preheat the fryer to 130C. Chop your potatoes into chips, you want "chip shop" size ones for this recipe, and rinse in a little cold water to remove some of the starch. Pop the cut chips into a saucepan and cover with water, Bring to the boil remove from the heat and drain in a colander. Pop onto a tray and into the fridge to dry and cool.
STEP 2 - Fry the chips in the fryer, in batches, for 8/10 minutes until they become soft to the touch, remove and place onto grease-proof paper
STEP 3 - Turn the fryer up to 190C and again fry the blanched chips in batches until crispy and golden brown, remove into a bowl and season with sea salt
Cook the steak in a pan to your liking (we cooked medium-rare) and serve with your crispy triple cooked chips
