One of our fave dishes here at Cranble HQ, and super easy to make....
method
Roughly chop your sweet potatoes and bring to the simmer in a saucepan until tender, this should take about 10 minutes, remove from the heat and drain
Pop a heavy bottomed frying pan/wok onto a high heat, add a glug of olive oil and chuck in your sweet potatoes , keep your pan moving so your potatoes don't burn, then add your chopped chorizo and give your pan a good shake so everything is mixed together
Remove your pan from the heat and add your washed baby spinach using a slotted spoon fold all ingredients together until your spinach has wilted , divide between 2 plates then pop your pan back on the heat, add another glug of olive oil and crack your eggs in to the pan, fry until cooked then slide on top of your sweet potatoes and chorizo, season with a few cracks of black pepper and enjoy...
