Sweet and Sticky Pork Ribs
Poached then glazed, these ribs are super easy and even more delicious....

90 - 120minutes
- Place the ribs into a large saucepan or stockpot over a high heat. Cover with water and add 1 chopped onion, 2 garlic cloves and peppercorns. Bring to the boil, then simmer, for one hour until the meat is tender.
- Preheat the oven to 180C/Gas 4. For the glaze, heat a deep-sided frying pan until hot, then add the olive oil, onions and garlic and fry until the onion has softened. Add the chillies, cumin seeds, fennel seeds and brown sugar and cook for a further 1-2 minutes, until the sugar has melted. Add the tomato ketchup, soy sauce and hot sauce and bring to the boil, then reduce the heat and simmer for 5/10 minutes, until the mixture has thickened. Remove and allow to cool slightly, transfer to a food processor/blender and blitz to a smooth paste.
- Remove the ribs from the pan and place onto a baking sheet. Lather the marinade over the ribs, making sure they are completely coated. Place into the oven to roast for 15 minutes until sticky and heated through. Remove from the oven and slice the rack into individual ribs........
