Super simple dish using some left over vegetables and pancetta

method

  1. Boil water in a large pot to make sure pasta doesn't stick together, add a good pinch of salt and glug of Olive Oil, add your Pasta and cook until tender, drain and set aside keeping a bit of the pasta water back

  2. In a large frying pan add a good glug of Olive Oil, chuck in your chopped bacon and Mushrooms and cook with colour remembering to move the pan as not to burn, once the bacon and mushrooms are cooked add your Spinach and Wild Garlic and return to the heat until they have wilted

  3. Add your cooked pasta and a cup of the pasta water and bring to the boil, then chuck in your grated Parmesan and using a pair of tongs or a pasta scoop gently fold in the cheese

  4. Turn out into a bowl, chuck on the remaining Parmesan and drizzle with olive oil
