Lamb mince cooked with aromatic spices.This is a super versatile dish that can be served with rice, potatoes, naan/flatbreads or even just on a jacket potato. It's also a great dish to use up those awkward fridge vegetables

Method

  1. In a large saucepan add your oil and brown off your onions and garlic, once browned chuck in your chopped chilli

  2. Add another splash of oil and fry off your spices for 2/3 minutes, chuck in your tomatoes, carrots and potatoes then add your stock

  3. Bring to a simmer and cook until your vegetables are tender, chuck in your peas and and adjust seasoning if needed

  4. Roughly chop your coriander and stir in, serve with rice
