STOP what you're doing and make this, its so so so good, use shop bought Kimchi or try making the Cranble one
method
Heat a pan on medium-high heat and add a splash of oil chuck in your bacon and cook for 2 to 3 mins, then add the onion and Kimchi and cook for a couple more minutes
In a bowl mix all the sauce ingredients until all are fully combined, then stir into your bacon and kimchi mix
Blanch the udon noodles per manufacturer’s instructions. Drain the water. (if using straight to wok ones loosen them in the packet before stirring into your pan) Using tongs or a spatula gently fold the noodles into the mix taking care not to damage them
Serve the noodles in a bowl and top with a fried egg and some chopped spring onions
