Super easy Christmas side dish....

method

  1. Pop your prepped carrots and parsnips into a saucepan and cover with water and bring to the boil, drop the heat and simmer for 10 minutes and drain

  2. Pop your cooked carrots and parsnips into a roasting tray and drizzle with oil, salt and pepper and chuck into a preheated oven (200C) for 20 minutes until nice and golden brown
