A delicious, lean fish dish with fragrant Thai flavours
To make the marinade, mix together the Soy, 1 tbsp of the pickled ginger, juice of half a lime and half your coriander and pour over the mackerel. Cover and chill for 30 mins.
In a mixing bowl add your cooked noodles, sesame seeds, chopped coriander, spring onions, a splash of soy, the remaining pickled ginger and juice of half a lime and toss together, place into serving bowls
Heat a grill pan and put the mackerel in skin-side down, Grill for 5 mins, then turn and baste with remaining marinade, cook for a further 2/3 minutes then place on top of your noodles and serve
