Barnsley chop is prepared from the saddle of lamb, it is effectively a double loin chop and its so bloody tasty....
Preheat the oven to 180C/Gas 4. Place a griddle pan on a medium high heat. Season the Lamb with salt and olive oil, place the lamb into the grill pan and on all sides for 1/2 minutes until fully bar marked form the pan and pop into the oven for 8/10 minutes. Remove and allow to rest for 5 minutes
Fill a saucepan with water and bring to the boil, blanch your peas for 1 minute and drain. Cut your bacon onto lardons (short chunky strips) and add to a hot frying pan, cook until crispy and add the blanched peas in. Stir in the mint jelly and crack loads of black pepper in. Serve with mashed potatoes
