Massive flavour in this amazing sauce recipe, for extra sweetness i use pears instead of apples.

Peel and de-seed your tomatoes, this is easier than it sounds, score the bottom of your tomatoes and drop into boiling water for 15 seconds, then straight into ice water, the skins should slip off nice and easy, chop into quarters and remove the seeds, dice the flesh and set aside
In a large pan chuck a splash of oil and sweat the onions, fennel and chilli without colour, then add the spices, tomato petals, fruit, water, sugar, Hendersons and vinegar to the pan
Mix well and leave to simmer on a medium heat until reduced to a sauce like consistency
Chuck everything into a blender and blitz until smooth, pass through a sieve, pop into a kilner jar and store in the fridge
