  1. Peel and chop your potatoes, chuck in a pan of salted water boil and simmer until tender

  2. Drain into a colander and shake about a bit to rough up the edges of your soon to be roasted potatoes

  3. In a deep oven tray pour all your goose fat and chuck into a super hot oven (230 degrees) for 10 minutes until hot

  4. Carefully chuck your roughed up tatties into your hot fat and roast until super crispy, turning occasionally, should take about 30 minutes
