Coconut, Rhubarb and Almond Chia Puddings

Method

  1. Preheat the oven to 170 degrees

  2. Cut the rhubarb into 2/3cm lengths and sprinkle liberally with the sugar in a deep baking tray. Cover with foil

  3. Roast in an oven for 15 minutes and then remove the foil. The sugar should have melted by now so place back in the oven, uncovered for an extra 5/10 minutes till soft.

  4. When cool, place on top of chia pots and garnish with toasted coconut flakes or almonds
