Coconut, Rhubarb and Almond Chia Puddings
A delicious Vegan breakfast to kick-start your morning!

- Preheat the oven to 170 degrees
- Cut the rhubarb into 2/3cm lengths and sprinkle liberally with the sugar in a deep baking tray. Cover with foil
- Roast in an oven for 15 minutes and then remove the foil. The sugar should have melted by now so place back in the oven, uncovered for an extra 5/10 minutes till soft.
- When cool, place on top of chia pots and garnish with toasted coconut flakes or almonds
