In a heavy saucepan bring your water and butter to the boil, then and add your flour, stirring well over a low heat to cook out the flour, until the mixture comes away from the sides clearly and forms a ball
Remove from the heat. Beat in the whole egg and continue beating until thick and smooth and slightly cooled
Spoon the mixture into a piping bag with a fluted nozzle. Heat your oil and squeeze 4 inch strips of dough into hot oil. Fry 3 or 4 strips at a time until golden brown , turning once, for 2 minutes on each side. Drain on to paper towels.
