Another compound butter for your collection, this one is amazing to finish a fish stew and perfect for roasting gambas


  1. Pop your chorizo into an oven at 180c for about 12 minutes, you just want to loosen it up so it starts leaking all that lovely fat

  2. Soften your butter in a bowl and season with salt and pepper, add your chilli and paprika

  3. Take your chorizo and blitz it in a food processor until its a smooth paste, then fold it into your butter and mix well, roll in grease proof paper and store in the fridge
