Delicious stuffing! nothing more to say on the matter!
Pop the sliced shallots into a saucepan with the butter and cook on a low heat until they become soft, remove and cool in the fridge.
Whilst the shallots are cooking make the stuffing mixture, add all the remaining ingredients into a big mixing bowl and mix well, add the cooled shallots and mix well again, season with salt and black pepper. Place the mixture into some terrine moulds (see video) or a small loaf tin and bake in the oven for 35/40 minutes at 108C. Remove from the cooking mould slice and serve
