This is so easy to make and goes with anything from black pudding to scallops


  1. Peel and dice your celeriac and your butter and chuck into a saucepan with a lid on and pop onto a medium heat, making sure the butter doesn't catch, cook until your celeriac is super tender

  2. When your celeriac is cooked separate the liquid and set aside

  3. Pop your celeriac into a blender and add enough liquid to loosen the mixture, turn on full and blend for a good 6-8 minutes, adding more liquid if needed, season with salt
