Perfect dish to rock alongside your roast

method

  1. Peel your carrots and remove the tops, keep these as you will need them to finish the dish, pop your peeled carrots into a pan of water and bring to a simmer, cook until tender and drain keeping a splash of the water back

  2. Heat up some olive oil in a heavy bottomed frying pan and chuck your cooked carrots in, pan roast until golden, then moving quickly chuck a dollop of honey in to the pan, make sure you turn the heat down a bit and keep the pan moving, add your carrot juice and reduce the liquor then chuck in your chopped hazelnuts and chopped carrot tops and serve
