Delicious smooth velvety soup...perfect winter warmer served with warm bread....
Melt the butter in a medium sized saucepan. Add the finely sliced onions and cook on a medium heat until they become translucent. Throw in the chopped broccoli and coat in the butter and onion mix, add the chicken stock, season and bring to a gentle simmer.
Pour the mixture into a blender, add the grated cheese and blitz until perfectly velvety and smooth (should take about 5/6 minutes) check seasoning and serve. If you want to be fancy drop a soft poached egg into the bowl before serving.
