Awesome way of using up extra turkey this Christmas.....
Put a large frying pan onto a medium heat and put a good half inch of vegetable oil in and bring up to a frying temperature (so it sizzles when you drop bread crumbs in). Now you need to breadcrumb the turkey. Dust the turkey with the flour, then into the beaten eggs and finally into the panko breadcrumbs, Gently lay the bread crumbed turkey into the hot oil and cook until golden, about 2/3 minutes each side then pop into a hot oven for 5 minutes, remove and place onto some kitchen paper.
In a separate frying pan gently fry the bacon lardons until crispy, add in the sprouts and cook for a few minutes until they begin to brown, then crumble in the chestnuts, season well with black pepper and serve with cranberry jelly.
