Really simple pesto recipe, Mixed through some tagliatelle with grilled chicken or spread onto some toasted sour dough it goes with absolutely anything!

method

  1. Chuck your basil in a pestle and mortar with a pinch of sea salt for an abrasive, then go to town on it until you make a paste

  2. Lightly toast your pine nuts and chuck them in, lightly bash then add your parmesan and a slow constant dribble of extra virgin olive oil until you have a loose consistency

  3. Add the rest of your parmesan and season with sea salt and black pepper to taste, for a touch of sharpness squeeze half a lemon in!
