With smoked bacon and caramelised red onion....This is so easy to do and really cheap!
Cook the pasta as per the cooking instructions on the packet and drain. Heat up the bechamel sauce gently in a sauce pan, add all the grated cheeses and stir well.
Add a glug of olive oil to a frying pan and cook the bacon lardons until golden, add in the diced red onion and cook for a further 5 minutes until they become soft
Preheat the grill to high. Mix the cooked pasta into the cheese sauce and add half the bacon and onion mix, pour the mixture into an oven proof dish, sprinkle the remaining bacon mixture and a handful of Parmesan over the top and place under the grill for 3-4 minutes until golden brown. Sprinkle with the chopped chives and serve.
