  1. 1. Pre-heat your oven to 200C/Gas 6, lay your slices of ham in between 2 sheets of grease proof paper, pop onto a baking sheet and bake for 10/12 minutes until crispy, remove and break up into shards

  2. 2. Split your watermelon in half across the centre and scoop out the flesh, chop into dice size chunks and mix with your diced feta, add all your chopped herbs and shards of crispy ham, pop back into your halved watermelon bowl, drizzle with some extra virgin olive oil and serve...
