Awesome way to use up those odds and sods in the fridge

- 1. Get a frying pan onto a medium heat and chuck your butter in, meanwhile whisk your eggs in a bowl and season with salt and pepper
- 2. Add your whisked eggs and move them about in the pan until they start to form, then spread your mushrooms and cheese evenly on top, allow to cook for a further minute then fold half your omelette over and serve
