Method

  1. Remove the skin from the salmon and cut into a small dice

    Mix in all the other ingredients, season with salt and pepper and add the lemon juice last minute 

    Taste and adjust seasoning where necessary

    Arrange into little patty shapes on the plate 

  2. Separate 2 eggs very carefully as not to split the yolks and place the yolks onto of the salmon Season and serve with warm bread
