Method

  1. 1. Sweat your mushrooms and shallots off in a saucepan until golden brown and just starting to catch, then add your red wine and reduce by half

  2. 2. Add your both your stocks and reduce by 2/3rds skimming any impurity's off as it reduces

  3. 3. Pass through a fine sieve into a clean pan and serve with your chosen dish
