One Pot Lemon and Garlic Chicken

Method

  1. Heat your oven to 180C/gas 6. Chop your potatoes in half, Slice your garlic and lemon in half and toss with the potatoes, thyme, baby onions and wine in a roasting tin and season with salt and black pepper

  2. In a frying pan brown your chicken thighs skin side down for 6/7 minutes until nice and golden, place into the roasting tin with the other ingredients

  3. Pop into your hot oven and roast for 30-40 minutes until the thighs are cooked, remove from the oven, add your baby spinach and cover with foil for 5 minutes, this will allow your chicken to rest and your spinach to wilt...
