Delicious, fragrant southern Indian prawn curry....

- 1. In a thick bottomed pan, heat the vegetable oil, add in the mustard seeds and allow to sizzle and crackle. Add in the curry leaves, be careful as they will splatter in the hot oil
- 2. Next add in the chopped onion, the sliced chilli and salt and fry for 10-12 mins until the onions begin to soften. Once the onions have softened, add in the turmeric powder and stir well for 2 minutes to cook out the turmeric. Add in the water to loosen in needed.
- 3. Next add in the coconut milk and mix in well. Allow to simmer for 5 minutes. Add in the prawns, mix well and allow to simmer for 2 minutes. Squeeze in the lime juice and sprinkle over the coriander. Serve with rice and naan bread
