  1. 1. Preheat a large wok style pan on a medium high heat, add a glug of olive oil and throw in the shallots, peppers and mushrooms and fry on a high heat, then throw in the shredded chicken, coriander, Tabasco, then add in the rice and add splash of water and cook out for 6-7 minutes

  2. 2. Lay out a piece of foil and pop a tortilla on top, spoon some of the mixture down the middle, sprinkle some grated cheese over the top and splash some more hot sauce over, wrap the mixture up in the tortilla and wrap again in the foil and you're good to go
