Method

  1. 1. Mix the salt, sugar and water together in a bowl and add the chicken to brine, pop into the fridge for 1 hour. After this time remove the chicken from the brine and dry off on Kitchen paper.

  2. 2. Preheat your fryer to 190C and mix the flours together then add in the dried, brined chicken and coat well. Drop the chicken strips into the fryer 1 at a time and cook until golden (if you have a small fryer preheat your oven to 140C to keep the chicken warm while you fry in batches)

  3. 3. Mix the sriracha sauce and mirin in a pan and heat up gently, once the chicken is all fried remove from the fryer and dry off on kitchen paper then cover with the spicy sriracha sauce mix, sprinkle with sesame seeds and coriander and serve.
