Method

  1. Season chicken with salt and black pepper, then into a char-grill pan skin side down to get those bar marks onto your chicken, turn over and pop into a hot oven (180C) for 20/25 minutes, While your chicken is cooking, crack on with your corn salsa,

  2. In food processor, pulse basil, mint, coriander, grated Parmesan and garlic, until nice and fine, add your sliced chilli and sweetcorn, season with salt, pepper and lemon juice and set aside

  3. Remove your chicken from the oven and pop your pan onto a medium heat, add your honey and butter and baste your chicken, when your sauce is all sticky and delicious plate your chicken and serve with your corn salsa
