Method

  1. First pre heat your oven to 180C, prick your potatoes with a fork and bake for about an hour until a knife slips in without any resistance

  2. Once cooked remove from the oven and allow to cool for 10 minutes until you are able to handle them, then remove the skins and push the potato though a fine sieve or use a potato ricer

  3. Now add your egg yolks and fold in, then add your flour in stages until everything is incorporated, season with salt and pepper, wrap in clingfilm and pop into the fridge for 130 minutes to rest

  4. Remove the cling film and cut the dough into 4, shape each ball into a long sausage shape, and using a sharp knife cut into 2/3cm balls and place onto grease proof paper

  5. To cook, bring a pan of water up to the boil and drop your gnocchi in for about 1 minute or until they start to float to the surface, drain and fry in olive oil and butter until golden
