  1. 1. Preheat the oven to 200C/Gas 6. Mix the lamb mince in a bowl with all the spices and season with salt and pepper. Shape the mince around a wooden skewer and stable upright with half an onion. Wrap in tin foil and pop into the oven for 45/50 minutes.

  2. 2. For the salad, finely slice the remaining onion, tomatoes and the lettuce. Mix the mayonnaise and the mint jelly together and set aside and pop the pita breads into the oven to warm through.

  3. 3. Remove the lamb doner from the oven and discard the foil. Using a long sharp knife slice the meat into long strips and pack into the warm pita breads, serve with your salad, mint sauce and hot sauce
