Cider Braised Chorizo

This dish is super simple, find yourself a nice soft cooking chorizo and a good cider, in this recipe i use Aspall, serve this with warm crusty bread to mop up the delicious sauce

Method

  1. Chop your chorizo, you can do this however you like, i like to cut mine length ways, chuck into an oven proof pan and pop under a preheated grill for 2/3 minutes to soften

  2. Remove the pan from the grill and pop onto the stove on a medium heat, the chorizo will start to sizzle, add a splash of sherry vinegar and give your pan a shake

  3. Then addl your cider and turn up the heat on your pan and reduce the liquid by 2/3rds

  4. Now add your chicken stock and reduce by half, add your chopped parsley and serve
