Amazingly simple dish for a winter BBQ or a summer one for that matter!

Method

  1. Cook the carrots in salted water until soft and tender, cool and wrap them in the smoked bacon

  2. Arrange on a wire rack on a baking sheet and roast in a preheated BBQ until the bacon is crispy and the carrots are tender, about 20-30 minutes, glazing with the maple syrup half way through.
